As a proud member of the tourism and hospitality industries, Wynn stays committed to food sustainability, ecological conservation and the responsible use of the Earth’s valuable resources. To celebrate the UN World Oceans Day on June 8 and Sustainable Gastronomy Day on June 18, Wynn is introducing a fine selection of sustainable seafood dishes at eight designated restaurants across Wynn Macau and Wynn Palace from now to June 30. Made with premium, certified sustainable seafood, these eco-conscious plates are designed and crafted to bring attention to the importance of sustainable development and consumption, and to raise public awareness of the dangers facing our oceans and their ecological resources. Sustainable seafood refers to seafood that is caught or farmed using sustainable practices, with a focus on traceability, environmental sustainability and social responsibility. During the promotion period, guests can support ecological conservation by enjoying gourmet fare made with top-quality, certified sustainable seafood at a number of Wynn restaurants in Macau, including Wing Lei Palace, SW Steakhouse, 99 Noodles and Palace Café at Wynn Palace, and Mizumi, Ristorante il Teatro, Café Encore and Café Esplanada at Wynn Macau. Highlights include Golden-fried Lobster Rolls with Lace Fat served with Pomelo and Cucumber Salad, Hot and Sour Seafood Soup (Wing Lei Palace); King Crab Tart and Jumbo Shrimp Cocktail (SW Steakhouse); Grilled Octopus and Murray Cod Fish (Ristorante il Teatro); Egg Custard (Chawanmushi) with Spanner Crab and Scallop tempura with Hokkaido sea urchin (Mizumi at Wynn Macau). In addition, as part of its effort to promote sustainable dining and consumption, Wynn is hosting the Masterclass in Sustainable Wines, featuring internationally renowned sommelier Jennifer Docherty, will take place on June 20 at Wynn Palace. Docherty became the first ethnically Chinese and Mandarin-speaking Master of Wine when she obtained this prestigious title in 2015. In her masterclass, she will cover a number of topics ranging from different wine types and their farming and production methods, to sustainable development of the wine industry and natural wine—a movement that has in recent years generated considerable interest and debate amongst China’s younger generation of wine enthusiasts.
